Ingredients for 15 muffins:
- 200 grams of flour type 2

- 3 eggs
- 1 goat mozzarella (or cow)
- 100 ml of rice milk
- 100 ml of sunflower oil
- 1 teaspoon dry yeast
- Salt and pepper
The procedure is very simple: after activating the dry yeast (or you can use half a packet of yeast bread) and cut the mozzarella into very small cubes, combine all ingredients in a bowl, stirring well until mixture is smooth.
We distribute the mixture into cups or into the mold and garnish with some other caper on the surface of the muffin. Bake at 180 ° for 20 minutes.
From serve still warm to maintain the melted mozzarella (may also be prepared first and then heat).
